A hot favourite in Johor now in Subang Jaya


JOHOR BARU: It wouldn’t be too far-fetched to proclaim this city as the “mee rebus” capital of the nation.
From street corner stalls to food courts, from coffee shops to restaurants, the dish is easily available and city folk of all races have learnt to enjoy their plate of mee rebus.
Some like it with their satay and some prefer it with otak-otak while others like it plain.
And the latest offering in town is the “mee rebus gear box” because it is served with those huge beef bones. Hence, the similarity with the shaft of the car gears.
But whichever way the dish is prepared, mee rebus Johor and its reputation has spread throughout the length and breadth of the country.
Former Prime Minister Tun Dr Mahathir Mohamad and Singapore’s Minister Mentor Lee Kuan Yew are ardent lovers of this savoury dish, especially the one prepared by the doyen of mee rebus Johor, Haji Wahid Ali of Kampung Melayu here.
His is the brown version with its gravy thick and sticky. There are the lighter coloured versions too and there are also the ones with a tinge of orange.
But connoisseurs of mee rebus will tell you that those offered here are simply the best.
As commented by Wak Bu of Restoran Mat's Bess: “The Johor mee rebus is unique in its taste and flavour and the way it is prepared, especially the gravy.
“It takes patience. No short cuts. That’s the Johor way and believe me I have eaten mee rebus all over the country and nothing beats the Johor version.

“I guess it’s in the spices and other ingredients used. For example, the base of the gravy is made from freshly grounded tapioca but there are people who use tapioca flour instead.
“And the beef stock used is very important in determining the outcome.
“Others use prawns or chicken bones. Again the flavour will be different,” said Wak Bu.
“We use the best ingredients and with the right mix, the flavour of our mee rebus is unique. Also the bits of prawn crackers we use as part of the serving help make the mee rebus taste different,” said Wak Bu who's mee rebus originated from Muar a town at the Southern Tip of Johore.
